Stroke is usually caused by plaque buildup in the blood vessels. This plaque could break off as a clot and cause a blockage in the arteries—foods high in salt, cholesterol, and fat increase the risk. Certain foods cause the accumulation of fluids in the body. Fluids such as uric acid could accumulate due to poor nutrition and cause swellings and the formation of crystals. Tumors could also develop due to the intake of highly refined foods. These tumors could be malignant or benign.
